So what's the big secret to contest-winning chili?

Is it the spice mix?

He shared it with me. It's a pretty run-of-the-mill recipe, except for the secret ingredient.

Anchovies.
I am not as cool as JimVH. Nor or you. Well, unless you ARE JimVH.

I already add three tablespoons of Worcestershire Sauce to a crock of chili. Some essence of anchovy has always been there.

Lately I have making home-made Caesar salad dressing.... so a tube of anchovy paste is always standing by in my fridge.

Just had some anchovies on my grilled pizza last night. It was... ::chef's kiss::

Add a little anchovy paste to your scramble eggs.

Boom.

This is not to be construed as a confirmation or denial that anchovies play any role in my chili recipe.

True story:

I do not have my competition chili recipe any more. I used an online recipe tracker (recipesaver.net) that went boobs-up and I lost all of my recipe collection. Like an idiot, I didn't have them backed-up anywhere. I've found several since then, written down here and there, but that chili recipe has never reappeared. It's been so long since I entered a cook-off I don't remember the details. I can get close, but just can't re-capture the magic.

For the record, there is a secret ingredient I haven't forgotten, but it never swam in the ocean.
