No, sir. Cinnamon and beans enjoy the same level of respect in Texas chili.

My wife tried that. She was under the impression that since she ran out of chili power she could use red pepper flakes as a one for one replacement. Nope! That was one hot pot!Troubadour wrote: ↑19 Sep 2022, 12:32Red pepper flakes?JimVH wrote: ↑19 Sep 2022, 10:55 True story:
I do not have my competition chili recipe any more. I used an online recipe tracker (recipesaver.net) that went boobs-up and I lost all of my recipe collection. Like an idiot, I didn't have them backed-up anywhere. I've found several since then, written down here and there, but that chili recipe has never reappeared. It's been so long since I entered a cook-off I don't remember the details. I can get close, but just can't re-capture the magic.
For the record, there is a secret ingredient I haven't forgotten, but it never swam in the ocean.

Red pepper flakes are an adequate substitute for cayenne powder.joegoat wrote: ↑19 Sep 2022, 20:26My wife tried that. Red pepper flake does not a substitute for a mixture of cumin, oregano, paprika, and ancho with garlic and onion powders.

Not at all, but there are those that add those spices to chili.
We are not the same.
