I'm a bit confused - by "utilitarian" do you just mean "pragmatic", or are you referring to some obscure outdated and nonsensical vein of philosophical "thought"?
It's a pun about both, as we are embarrassing ourselves by pretending to think and write logically.
Also, wagons and canoes are both practical objects -- but unlikely to serve well together. That's why no one has invented the wagon-canoe one yet (except Biff).
