Our family recipe is reliable and tasty. Variations/substitutions like using 2% milk when you are out of buttermilk usually result in little difference in final product.

Liberally grease an iron skillet. Preheat oven to 450.
Mix 2 eggs, 1/4 C veg oil and splash of milk. Add 2 C SR Cornmeal, 1/2 t salt and 1/2 C SR Flour. Stir in enough additional buttermilk to make a thick but pourable batter.

Pour all into skillet and bake about 20 minutes or until GBD.

My aunt preheats her greased skillet and adds batter to a hot pan. Not sure of much different result.

We have a square cast iron skillet and I like it best with some diced green chilies or jalapenos mixed in.

A local joint we order from sends a 10" round cornbread with our chicken-dinner-for-two. They put chilies in it AND honey on top. The honey must go on during cooking because it crisps up a little. I don't think they go well together, but it doesn't count as a side so I get it anyway. I eat it because cornbread, but it's not something I'd pay extra for.

Golden Brown Done? Gooey Batter Dry?

One of the things I love about Southern jargon is the lack of goofy urban acronyms. Don't be startin' that.

I do one with chilies, chorizo, and shredded cheese. It's good enough to be a whole meal.
