I used to hate cranberry sauce too, but my wife makes some sort of cranberry/orange sauce that is out of this world. I don't know if she divulges the recipe but if I can I'll send it along. It really upped my Thanksgiving game.

I dropped by the grocery store yesterday and it's already a madhouse. Making my list this morning and will charge back into the store today.

1. Smoked turkey (from the area Sertoma Club)
2. Roasted wild duck
2. Old family recipe cornbread dressing
3. Dirty rice with oysters
4. Green bean casserole, with lots of fried onions
5. Rolls
6. Pumpkin pie
7. Apple pie
8. Pecan pie

I was lately voluntold that I'm cooking a turkey this year.

My plan is to
-Dry brine it (with bbq rub) over night
-Inject it with something...I'm thinking garlic butter or maybe use olive oil, not sure yet
-Smoke it in my Pit Barrel

I don't know for sure how big a "bunch of shallots" is, but I can make this work.

My butcher gets oysters during the holidays. This is going on the Christmas menu.

Now I owe you double. Are there crawfish in your neighborhood, come springtime? I will make the pilgrimage next season.

My office mate and I talked about this yesterday. Green bean casserole is the thing that we hate the most.
Got to have it. It's a tradition, whether it gets eaten or not, it has to be there, and t least a little has to make it onto the plate. This TG I did the honors of making the GBC, and I used the usual CMS, but added a bottle of halved mushroom buttons and bacon bits. No one noticed. Maybe it was due to the extra large layer of french fried onions I covered the entire casserole with. (BTW, "casserole", is a very comforting word, year round, holidays, church luncheons, evening gatherings.) Anyway, the GBC is the dish on the upper right of the stove pic.

Cornbread dressing. There is no substitute or equal. There was giblet gravy to top it with.

My wife made me my own, personal egg custard because she's a great wife and knows it's my favorite.
